I tried finding something similar for fish and found this... the pictures seem awesome.
This one is a bit more wordy... but still encyclopedia format, which is simple, easy, and straightforward. Your niece can find one she likes and read about it.
I love DK eyewitness books for that age. Brilliant photos, lots of information. You can read them together, keeping it simple when kids are really little but then read more of the details as they ask questions or want to know more.

Growing up, I was always a huge fan of the eyewitness series of books. I think they're about the right age group too. They have a fish and oceans one.
