This version of El Quijote is very nice to read with lots of interesting footnotes, explanations, etc. (it's not exceptionally fancy visually, but it is a nice hardcover):

You couldn't go wrong with a nicely bound collection of Borges' short stories.
There are a lot of Spanish-language booksellers on Abebooks.
You could try this edition. It has a lot of useful notes but it might still be too much for you. Anyways, if you want to read it in the future this edition will be really useful.
