Your initial thought is correct: don't bother snapping the onesie under the woolie--it will defeat the purpose of the woolie, which is you want his diaper to be waterproof. Just either use regular shirts or don't snap the onesie.

I used cloth diaper + PUL cover (such as Rumparooz) + wool cover. Some people ditch the PUL cover and just do cloth diaper + wool, but it would mean that you would need to wash and treat your wool cover with lanolin much more often than if you used a PUL cover too. Here's how I treat my wool covers with lanolin (pictures included!)

As for brands, I've had good success with EcoPosh. You can actually buy them on Amazon too, but they're a nice brand that's tightly woven.
