I'd recommend the Scarlett 18i20 audio interface (affiliate link), unless the mixer you have access to has a USB out and can send 7 individual channels to your computer and into Audacity (1 channel for each mic). What kind of mixer is it?
I and other sound design friends have all used PreSonus Audioboxes. We're usually using an older one (University) but we love their reliability and ability to plug and play, and kinda set it and forget it.
