Honestly I think this is one case where it's really useful to go back to the source. Emil Artin's Galois Theory: Lectures Delivered at the University of Notre Dame. One of the clearest expositions I've encountered. Dummit and Foote is excellent as well.

I like this one: Field and Galois Theory by Patrick Morandi (Amazon).

This is also a classic: Galois Theory by Emil Artin (cheap Dover book on Amazon, legally free on Project Euclid).

I would recommend both Rotman and Stewart. When I try to learn something, I like to have two references available because, if I don't understand one book, I can look at it in another. (I have both of these books and they follow roughly the same approach.)

I also like McCarthy because he goes more into the details of the characteristic p case.

Artin and Kaplansky have written sets of notes that are considered classics but, I think, that you are better off following conventional approaches when learning the material rather than following their less conventional approaches.
