I have been doing just that myself, been saving old family movies before they are un watchable, I use https://www.amazon.ca/Hauppauge-Colossus-Express-Internal-HD-PVR/dp/B00WMJMDG6/ref=sr_1_fkmr0_1/141-6523776-5836914?s=electronics&ie=UTF8&qid=1494403343&sr=1-1-fkmr0&keywords=Hauppauge+Colossus+2+PCI+Express+Internal+1080p+HD-PV but because VHS only uses Av and not comp I had to get this https://www.amazon.ca/gp/product/B00LN0AGIM/ref=oh_aui_detailpage_o04_s00?ie=UTF8&psc=1 to convert just the video to hdmi, the card comes with an s video to av so I use that for the sound and av for picture, because the program that comes with the card is good for tv recording via hdmi in order to get decent audio and video to save I use obs studio which is free but because the video is huge MP4 I then re code that in handbreak which is also a free program to make it a smaller mkv so instead of 8gb per hour it's 1gb. Hope that helps. Also having a vcr to plug into all this helps. Luckily I already had one from the 90s

only the ps4 pro records at 1080p, the og ps4 records at 720p.

a capture card might help for full HD.

i have this one and its nice, but i do not use it for video games.

You should be good with those. In particular you might want to bring it via component in particular if the camcorder supports it...then S-Video would be my second choice, and lastly composite.

As for the Firewire question, USB 3.0 should be a primary target if your PC supports it, but USB 2.0 should also likely be "ok" for DV camcorder quality footage. I'd pay the extra for USB 3.0 however, or go with an internal PCI capture card if your PC can support it.

for USB, the logitech c920 is very popular and looks great for the price. a digital camcorder would be an upgrade over the c920, but like others have said, going the non-webcam route will also require using a capture card.
