Regarding travel: this exact reason is why I built a Viterbi from keeb.io. Here's a size comparison of it next to my ergodox.. Except for the extra thumb cluster keys that I never use, it's the same number of keys in a similar location and I find it easy to switch back and forth. For travel I carry it in this keyboard case.
Regarding using non-split, regular keyboards: I find it's slow, but not an issue for me to do occasionally. I just make sure to go slow and be deliberate, especially for things like making sure I have the right modifier (ctrl or alt, usually) pressed before pressing the second part of any chord.
Regarding using other folks keyboards: this is no more of a problem than if you were using a regular dvorak keyboard. Personally, this is one reason that I chose not to go with an alternate keymap, and typing at 100wpm with qwerty seems to work okay for me.
