Hmm this is an interesting question, because I actually really like Alton Brown for learning "how" to cook something more than a specific recipe. With that said, I still do his Banana Pudding whenever I bring a dessert to a gathering. Making the vanilla wafers is what seals the deal, although the pudding recipe is also great and good to have for any kind of pudding you'd want to make.
I also like both his stovetop and baked versions of Mac&Cheese: Stovetop and Baked
His book I'm just here for the food is one of the books I keep on my shelf. It's a great starter pack for someone interested in learning how to cook and get familiar in a kitchen. Each chapter is dedicated to a style of cooking (braising, frying, etc) with some recipes mixed in.
