Summer sausage. Hell, I'll convert a whole cow into summer sausage.

You'll need a sausage stuffer and probably a grinder. Kitchenaid has a grinder/stuffer attachment, though if you start wanting to move into sausages in a bigger way, you'll eventually need to invest in the bigger guns.

You can stuff into fibrous casings which are the peel-away casings like those used by commercial summer sausages. These casings are smoke permeable, so you can smoke them to cook.

Summer sausages are a great, easy sausage because they are cooked sausages, so you don't need to worry about a curing chamber. You can find recipes on Len Poli's page.
