For the how:
You could try this adapter it supports M.2 sata drives not NVME.
Your drive would have to be formatted Fat32 more than likely and this is all assumeing the head unit provides enough power to run the drive, and will work with whatever USB controller is on the adapter.
Try plugging an external hard drive into the usb if that works then this might.
For the why:
If you do not trust USB drives why are you trusting a cheap M.2 SSD? There are not many manufactures of NAND Flash it’s all about the controller and you get what you pay for.
For the cost of the adapter and drive why not just buy several usb drives and have backups ready to go if one fails?

Another thing to mention is SSD’s performance is related to temperature so in a car if they get too hot they could significantly slow down or shut off.

No. USB 2.0 is limited to around 30MB/s. :O

That's still a big question mark TBH. SD cards are not designed for rapid random I/O.
One crazy idea I have is to tap the USB signals on the WWAN slot, then somehow fit a USB M.2 SSD enclosure inside the laptop. Linux can be installed in a USB disk without issues, and the SSD's fast access times mostly offsets the 30MB/s USB 2.0 bottleneck.

IIRC there was a crazy mod a few years back that involved tapping the SATA lanes in the X200/201 docking connector in order to fit an mSATA SSD in the Expresscard slot. :O
What type of laptops is your ordering? Do they have m.2? If so the above option doesn't look like it will work. I was unable to find a m.2 double dock that can clone directly to each other, so you'll need software like Acronis to do the task mentioned. You can simply clone the source machine that has been fully configured which will be #1 to m.2 #2 - #18.
