I have several official and unofficial Raspberry pi cameras. The official cameras have good image quality and work well during the day, but night vision (even with the official NoIR camera) is a real challenge for them. I would argue that the official NoIR camera is great for IR photography, and "sciencey" projects, but probably not the best option for a night vision security camera.
I'm not sure of the exact brand, but my favorite camera looks exactly like this Makerfocus Night Vision Raspberry Pi camera. The image quality is great, and the IR lamps work flawlessly. I've had one running 24/7 for 6 months, with zero problems.

You’ll definitely want infrared night vision and don’t worry about getting super high resolution because you’ll end up dropping it down for an acceptable FPS anyway. I got that very camera and love it, just wish I would have gotten the wider angle lens version. The other really neat thing is you get to print a case for it :) I have the STL if you end up needing it
Edit: Just read the USB part but I honestly would still go with an actual Pi cam and if you want to add an additional USB later that’s up to you.
