First off, I think Shun is overpriced- you pay a premium for the name and the finish (which is indeed good-looking.) Knife preferences are very individual, so it's hard to recommend one, but I think my MAC is a better knife than any Shun I've tried, and less expensive. Not as good-looking though.

But yeah, don't spend a lot on your first decent knife. .Get something inexpensive and learn to care for it and keep it sharp. An expensive dull knife is no better than a cheap dull knife, tbh. A lot of people like the Victorinox, but I've also heard good things about this: https://www.amazon.com/Mercer-Culinary-Millennia-Chefs-Knife/dp/B005P0OLOQ/ as a starter knife. I haven't tried it, but at that price it's hard to go too wrong...

Spend the money you save on a decent water stone or two and learn to keep your knives sharp. If you feel like spending more on a higher-end knife in a year or so you'll know why you're spending the money, and you'll know how to care for it and keep it sharp.

I use a dollar store cheese shredder for hash browns too (thats one of the better tools for it), but there are plenty of immersion blenders you can get with a processor attachment for under $30. As for the knife, you only need one, and I have found a good one is well worth having, Mercer or Victorinox(for a little more) both have you covered for good daily use quality at a good price.
