Yes you can—once it's down to a "cube-able" consistency, it's just glace. I do it with chicken stock all the time, because I usually only have chicken bones on hand. I get about 32 half-inch cubes out of a single leftover chicken carcass. See my post here, and here's Jacques on the subject. I use cubes of glace all the time, straight from the freezer. It's a great way to boost any kind of sauce, soup, or rice.
Also, for "brown" stock (veal), I buy commercial glace de viande. It's nice to have both on hand. Beefy foods get glace de viande, pork and chicken get my glace de poulet.
