For &2500 (you'll have to forgive me, I don't know how to type a pound sign on an iPad), you can get a triple-monitor Eyefinity setup. Here's the lowdown:

CPU: Core i7-2700K This should be just a placeholder cost until the new Core i7-3770K is released.

Mobo: ASUS P8Z77 ATX

GPU: 2 x Radeon HD 7970 These in Crossfire are great for Eyefinity when you have the right drivers.

RAM: 16GB (4x4) Corsair Vengeance

HDD: Western Digital 1TB Caviar Black

Boot SSD: Corsair Force GT 240GB

PSU: Corsair HX 750W Power Supply

CPU Cooler: Corsair H80 High Performance Water Cooler

Case: Cooler Master Storm Trooper

Monitor: 3 x Samsung 27" Widescreen LED Monitor

Shipped from Amazon.co.uk, this should come out to around &2500, and it will be current and capable of most, if not all, games at max settings for at least the next 2-3 years. You're lucky to have such a huge budget. :) Good luck!

edit: If you want to wait until a 4GB edition of the GeForce GTX 680 comes out, two of those will definitely be pricier, but they work a little easier in SLI than 7970's since AMD has some driver issues. Also, the increased RAM on the cards should provide a little more wiggle room. Dropping to 8GB of RAM and cutting the size on the boot SSD should cover the cost overrun if there is any.

My main rig has a 3.3ghz i5 in it and my beast PC uses a 3.5ghz i7

Processing and memory tend to mostly affect simulations. The graphics card handles most of the processing done during modeling and rendering. Getting the best graphics card you can afford is generally the best solution


Here's what I like:

Video Card

Mobo

CPU

Memory

Of course you still need case, power supply, hard drive, dvd drive, etc. But all the above rings in at £767. So you might consider going to a Quadro 4000 series

And I didn't think of the SSD card, thanks very much! And the upgrade to the 4690k was also very helpful, thanks. Is that motherboard ok? The Asus Z97 puts me a bit over budget sadly.
