I eat gluten free and have amassed a collection of GF foods. I think the majority of these are casein free (I tried not to suggest anything with cheese, but you might find milk in some of these ideas, just sub it with almond milk or rice milk):

pulled pork: http://www.recipezaar.com/Pulled-Pork-Crock-Pot-131018

chicken or tuna salad: http://www.recipezaar.com/Jalapentildeo-Chicken-Salad-139170

hummus: http://www.recipezaar.com/Spinach-Garlic-Edamame-Hummus-77087

a bajillion different rice recipes: fried rice, mexican rice

polenta: http://www.recipezaar.com/Soft-Oven-Polenta-84268

seafood: scallops, shrimp, fish, crab etc. Maybe some jambalaya

could always make a gluten free pizza: http://www.recipezaar.com/Gluten-Free-Pizza-Crust-44487

fish n chips (use rice flour and GF beer)

meatloaf

oatmeal (can buy GF oats and instant oatmeal: http://www.amazon.com/Glutenfreedas-Instant-Oatmeal-Variety-6-Oatmeal/dp/B002AUF0Q2/ref=sr_1_1?ie=UTF8&s=grocery&qid=1266982902&sr=8-1

gluten free pancakes are pretty good: http://www.recipezaar.com/Buttermilk-Buckwheat-Pancakes-gluten-Free-123665

a ton of chicken recipes: roasted, pesto chicken, grilled, honey orange

spring rolls

fajitas, get GF tortillas. Can find em at most supermarkets, corn or other

burgers, ribs, roast, steak, pork chops, bbq chicken

splitpea soup: http://www.recipezaar.com/Uncle-Bills-Green-Split-Pea-With-Hambone-Soup-79563 (fucking delicious)

For bread, Pamela's makes a good GF bread mix thats available in most supermarkets: http://www.amazon.com/Pamelas-Products-Wheat-Free-Gluten-Free-19-Ounce/dp/B000DZFMEQ

If you're feeling more adventurous, you can try your hand at making your own bread. I've amassed a collection of decent recipes here: http://www.recipezaar.com/cookbook.php?bookid=242913 The Millet Oatmeal bread is my favorite.

Got any questions, don't hesitate to hit me up. I've been eating GF for about 3 years now, and my mother for 5.
