Finger puppets! They fit in your pocket, and making them do silly things, silly voices, hide behind things and pop out, etc. I have one that only comes out when we are waiting in a long line.
If you have time, learning some slight of hand coin tricks is pretty great, too. Pulling quarters out of ears, that sort of stuff.
Stickers are always good, too.
In general, give as much warning as you can before changing tack (in 5 minutes we're going to do X. This is your 2 minute warning. 1 minute. Ok when I'm done counting to 3), etc. say it in a happy voice with a smile. Let your kid choose between 2 acceptable choices as much as possible (which ride to do next, or even who rides with whom, who sits in front, who sits on which side, etc.), then say "good choice!" And talk about how he was the boss of that moment, then later, when it is your turn to be the boss, you can talk about how you did what he wanted, so now it's his turn to do what you want to do. That works reeeeeallly well on our kid. Taking turns is pretty much the only way he comprehends fairness at this age.
If he is getting antsy in line, empathize. Talk about how you hate waiting, too, but everyone waits their turn. 2 year olds just want you to understand them. Talk about what the ride will be like and what you think you might see or what you hope will happen. In general just try to be happy. If you are having fun, so will your kid.
My husband and I are kind of Disney nuts. This sounds horrible, but we've been "training" our son by taking him to the Mall of America (we live 15 min away), so he can practice crowds, lines, and rides. That's a bit extreme, although I think it is helping!
He also loves watching the Disney Sing Along DVD and we talk to him about going there and going on the rides. It is Disneyland, technically, and super late 80's/early 90's, but I think he won't notice the difference. He also loves crossing off a day each night on our countdown.
