Skin and Other Stories is my favourite.
To be fair, I don't read a ton of short stories, but I recall really enjoying Roald Dahl's. He has one or two books of short stories (for adults) that I've read and enjoyed, and even more that I haven't tried out. I liked Skin and other stories so maybe try that?
