This may be more than you're looking for, but I have this, use it daily, and the timer functions exactly the way you're looking for:
Sony undercabinet cd/radio/mp3 player
The right hand knob, visible in the first product image, is the volume control. On the opposite front corner is a knob that feels a little segmented when you turn it, which corresponds to the minutes that the LCD immediately starts showing. Then you press the knob in to start the timer, and once it starts beeping you need to push the knob in again to stop it.
Issues with it are that it only sets timers for whole minutes. The other day I set it for 120 minutes when I was roasting tomatoes, and didn't want to dig through the drawers for the timer with an hour hand. And for my aeropress coffee I use a timer with a memory button set to 90 seconds. I'd love it if I could just use the undercabinet timer instead.
