Don't scalp St. Augustine. Others may disagree, but I only recommend scalping for bermuda and zoysia....
As the cooler nights approach, your turf will begin to show signs of slower growth. Just maintain normal cutting height throughout this period and don't do anything to shock the turf. It will also require less water during this time.
I have never watered my lawn during the winters, but admittedly, I've never had St. Augustine. Freezing temps and a wet ground is not a good combination.
