There are a few systems. I would recommend Fantasy Flight Games' systems.

Edge of the Empire is focused on the scum and villains of the Star Wars universe. The smugglers, bounty hunters, and crimelords.

Age of Rebellion is focused on the war between the Empire and the Rebellion. This is the world of soldiers, pilots, and spies.

Force and Destiny isn't out yet, but it's what you want to play if you're into the world of the Jedi and Sith.

These are all compatible with each other, and can be run as their own game, or combined together. I'm a big fan of them, and if you're looking for anything in the original trilogy era, these will do pretty well.

I would start with the Age of Rebellion Core Rulebook first. This book carries the "military" feel that you might be looking for - careers focused on Rebellion soldiers, diplomats, pilots, etc.

The Adversary decks are a good product if you want to minimize bookkeeping (as you mentioned in your OP). You simply whip out the card of an enemy you need and boom, all the stats are lined out. Also, the specialization decks are there as well in the same way for the players to reference talents. I own every single product from the game EXCEPT specialization decks - I find that copying the talent tree from the book is usually enough for a player to check off and keep for reference. Of course, you might end up a doing a little page checking for some of the more involved talents.

There's the d6 game by West End Games, the d20 game by WotC similiar to D&D 3rd edition, there's saga edition by WotC (which would have made a better basis for D&D 4th edition), and then there's the series of games by Fantasy Flight; Edge of Empire, Age of Rebellion, and Force and Destiny.
