Somebody just posted a similar question to yours in r/carnivore about cravings and falling off the wagon. I'll copy and paste my response here. (My answer is that I eat something to feed the cravings that won't derail me completely. Harm reduction. I'm only human and I sometimes snap, too. Hope it helps)

-----

It was very hard for me in the beginning and it's gotten so much easier over time.

I'm not advocating cheating, but when a person is trying and trying and struggling, sometimes they do need help to ease them through that. I sure as hell did.

Sugar-fre jello with extra gelatin. I know, I know. Red dye #666. Artificial sweeteners. Yup. Not good. But it kept me on track. I made it with half the water and added packets of gelatin so it was SUPER firm. Kept that in the fridge and lopped off a piece when I needed to. I never noticed any negative consequences from that.

Breath mints and gum. Gotta be careful with the carbs here, but it helps.

Easy keto coconut flour bread. I did this one for the first three months and phased it out. Haven't had any in a very long time, but it served a purpose. I will say that, as the cravings fell away and my attention became more focused on my health and healing, I did discover that it was irritating my gut. But I'm so grateful that I had it because I don't know if I could've stayed the course for those first few months without it. (If anyone wants the recipe, message me. It's great-tasting, easy to make, and less harmful than any of the others I've found)

Frozen watermelon balls with salt. kk. This is a rare treat for me, but it's low in carbs and it did the trick the few times I had it. This became my go-to at parties when everyone else was eating their cake and chips.

NO ALCOHOL. Just one or two drinks will destroy your willpower. There's no way I could've succeeded if I hadn't gone 100% dry.

GET SLEEP. Exhaustion also saps willpower.

Remember that it gets better. The cravings and habits absolutely do mellow over time. The important thing is that when you do get tripped up, you stay in ketosis and don't totally destroy your progress. The above things were safer 'fails' than McDonald's, donuts, or losing my mind and downing three candy bars in a frenzy. I did try to avoid them when possible and I didn't take my 'outs' for granted.

Oh, and homemade beef jerky. That still satisfies my munchies when nothing else will. And no guilt!

Deviled eggs. I don't know why I love them so much, but I do. Miracle Whip isn't carnivore, but I ate it and I'm not sorry. Got me through my daughter's baby shower without destroying the peppermint cake.

For the carnivore community, all of these things may be considered 'sins,' but for me they meant harm reduction and a way to cope with my humanity as I worked through a long adjustment period. A way to stay in ketosis on very bad days. Everyone snaps. I think it's wise to have a safer strategy to snap without undoing all of your hard work. Social situations can be very hard in the beginning, especially when you don't have support. PMS, suffering a personal emotional blow, having a no-good-very-bad day can destroy all the work if you don't have a plan to get through such inevitable situations.

EDIT: Forgot to add this one. Herbal iced tea. This one is a chai without the tannins. I make a big batch with somepure monk fruit sweetener and keep it in the fridge. I still drink this. I also drink coffee. I also have my daily egg yolk shake with monk fruit and cinnamon as a treat. So yeah. I have a little sweetness in my life.

EDIT/EDIT! Before I gave up dairy I made homemade ice pops with a great quality cream (NOT the heavy cream crap with additives that they sell in the grocery store. good stuff from the co-op) and lots of egg yolks. Sweetened with monk fruit and some sort of extract. The maple was to die for. Vanilla was fantastic. It gets really hard so I poured the mix into popsicle molds and had a pop when I needed a guilt-free treat.

I'm buying some camel's milk so I can make it again soon.
