Mark Burnett wrote a book about the making of Borneo. There have been a number of AMAs with contestants and people who worked on the show. Seems like you might be particularly interested in the AMAs with camera men who have worked on the show. The Survivor Historians podcast talk a good amount about behind the scenes stuff.

OH and I also recommend that if possible you read "Survivor: The Ultimate Game" by Mark Burnett. He wrote it while Borneo was filming and it's deeply illuminating.
