I don't think I've ever seen a documentary about Paul. But I found this. It has music videos, live performances, narration by Paul, interviews. Read the description on amazon for more details. For George I would highly recommend George Harrison: Living In The Material World. I have watched most of it, and it is amazing. I still need to get a copy of it myself.
