Or just a caring case: (leave the HDMI cable connected to the projector (I assume you use it for other things as well) and just would need to connect the console to the HDMI and then plug in power

I bought that one but in blue.
Picked up one of these a few years ago. Works perfectly! At airports, TSA will make you remove the console in the airport, for scanning. No issues at all. Just make sure you're at the other end of the conveyor before it goes through. I had an agent almost cause my Xbox to fall on the floor while moving trays off the conveyor.
For a road trip, no issues at all.
