I used Green and Salkind's Using SPSS for Windows and Macintosh for an PSY 444 statistics. It's actually a great source because it has all the basics and good lessons on Univariate and Multivariate Regression as well as other test (MANOVA, ANCOVA, etc).
The data sets are all on web keyed to the book. :)
If you order this book, just make sure you have SPSS already, maybe from your graduate program, so don't buy the book that comes bundled with SPSS. You can also buy previous editions (I purchased the 5th) and suffer no loss of information because the only difference between the 6th and the 5th editions are the thickness of the pages.
If you'd like more theory and less practice, for the same class we used Howell's statistical methods in psychology. Make sure you have a good foundation in linear algebra if you'd like to read this.
