This week I finally got to make something that my dad made for family dinner almost a year ago: chicken mafe. I donβt know how exactly how he came across this recipe, but it was delicious. The peanut flavor is very prominent but is more balanced than a classic peanut sauce. The tomato, ginger, and the hint of spice combine to create a delicious sauce. The chicken thighs (I used boneless-skinless) were juicy and tender and extremely flavorful. This was a stellar dish and a great way to use a lot of cabbage without having that strong, slightly sulfurous smell/flavor.
For my MetaTheme, I went with a West African spin on a classic: a bissap mojito. Bissap is the West African name for hibiscus so this is basically just a hibiscus mojito. I got the hibiscus juice/syrup from Amazon and it is delicious. It added an interesting sweetness to the cocktail to counterbalance the high level of lime juice in the mojito.
