Cut out the MCT for a week and see how it goes. While getting fat adapted a lot of people get diarrhea, MCT is only going to compound that issue. Back off of it for now, then once fat adapted try adding it back in slowly, if you need the extra calories. Bullet proof coffee is great for keto, but is a serious chunk of calories easily 300+ for most recipes. Make sure you are accounting for it in your calorie count as well.
Generally BP coffee is a meal replacement, or for people in maintenance on keto who struggle to get to maintenance calorie levels. If you are drinking a BP coffee with a meal for breakfast you are likely getting 800+ calories for breakfast, putting you way ahead on your calories for the day, going to be hard to stay under your maintenance calories.
At your stats your BMR is ~2000 calories, to sustain meaningful weight loss you will need to stay under 2000 calories. If your job is highly active you may get a total loss of 2500-3000, if it is more sedentary you could be as low as 2400. I would say with your stats you should be shooting for ~1800 calories a day. BP coffee is going to take up ~ 1/6th of that.
Get some Whole Psyllium husk to drink once a day to get your fiber up (I like this brand personally).
Not that these can cure it, but they may help symptoms till you can get a game plan or find a good doctor to help. Hopefully adding good bacteria with probiotics can take up more real estate then the bad guys and feeding the good bacteria with a prebiotic soluble fiber like psyllium husk can help them thrive. Cutting out the sugar should hinder the bad bacteria food source. Just something to try for cheap till you can figure some fix out.
