This is something I've wanted to do for a while.

As for shallow trays of sani, I've found that a wallpaper tray is the perfect solution for things like carb stones and whatnot. It also makes a perfect drip tray for jockey boxes.

A great (and cheap) bit of equipment to get that really simplifies sanitization is a wallpaper tray. I got mine at Menards for $2.99 and it holds my paddle, tubing, bung, airlock, thief...basically everything you need to brew. You can also get them from Amazon, should you wish to.

Why do you need a spigot? It could just be a piece of pipe with a cap on one end. You can glue a piece of plastic to the bottom as a stand. And then fill and dump from the top. Like a big, opaque hydrometer sample tube.

Or you can just use a wallpaper tray.
