"Stop driving" oversimplifies things. Instead, as gas price rises, people just move the bar on what they're willing to drive for, along a gradient ranging from non-essential to essential.
There may be some psychological thing that kicks in at, say, $5 or $10 per gallon, but I suspect the bigger issue is how quickly the price rises, as a sudden shock makes the frog jump from the pan, ie, would stimulate dramatic behavioral adaptation among many people who would only marginally curb their driving if the impact were more gradual.
Interesting looking book (haven't read it but it's on my list), suggesting what exactly will change when gas gets more expensive. Cleverly structured, each chapter tells what happens as gas prices rise by an additional $2:
