I purchased a 4-quart flat-bottomed cast iron dutch oven especially to use it as a rice cooker. I've recently discovered that cast iron cooks wonderful rice (along with everything else!), and I got the 4-quart size especially to replace this cheapo flimsy aluminum pot I'd been using to make larger batches of rice. (Actually, the cheapo pot turned out to be a 3-quart, not a 4-quart.) I cooked up a batch of Thai jasmine rice, and it worked wonderfully: with the lid on, it boiled 4 cups of water in scarcely a few minutes on my stovetop, and the heavy lid helped to seal in the boiling steam and heat, which cooked the rice so that it came out with barely any sticking. This gave large saturated individual grains of rice, and wonderful flavor. Total cooking time: about 20 to 25 minutes, including 17 minutes to boil the rice. After only the single seasoning in the oven, the rice did not stick to the bottom of the pot! Who needs a $100 rice cooker when you can make perfect rice every time in your dutch oven?
