A mandoline is a must have with a dehydrator and it's also a must have in the kitchen. I strongly suggest the Benriner Mandoline, it is a classic in professional kitchens all over the world. I threw away 4 mandolines before finally getting one. Yeah it cost an arm and a leg but in the long run you'll save money (the blade is removable and can be sharpen!).

Also if you get any mandoline, get rid of the plastic protector handle and buy a pair of cut resistant glove (these or any other kevlar type). It's worth it.
