I'm also in grad school and I exercise a lot and don't eat meat, so I am pretty careful with my diet and getting proper macros.

If you can't get back to your place during the day, I would suggest packing lunches. I would nix the bagels mid-morning (studies have shown that carbs in the morning make you feel less satiated the rest of the day and eat more calories) for something high protein that you can cook at home for breakfast.

Another idea is a banana with almonds or pistachios.

Packing protein powder and milk in a thermos is a good way to get protein during the day.

English muffins with light babybel spreads (135 calories total), bulk nuts (just be mindful of portions), hard boiled eggs (make in advance for a satiating snack), low-carb tortillas with peanut butter or black bean burgers from morningstar, meatless patties (they have chickpea and falafel ones that are ready in minute), greek yogurt/skyr, snap pea crisps, roasted soynuts, roasted edamame, seaweed snacks, wholly guacamole packs, avocados, chia squeezes, pop chips, and light cheese sticks are some of my favorite low-cost and very quick snacks.

Frozen Amy's meals are a cheaper and healthier dinner option than most takeout.

I also love getting fruits/vegetables delivered since I don't have a lot of time during the week. Check to see if you're city has a service that does this (I use door to door organics).

You can also shop for groceries online (Peapod or other similar services) for a little higher price if you think it would save you time and money over ordering food.

Making meals in advance (chili, pasta, soups, casseroles) helps me have healthy things to bring in during the week. I also like to cut up vegetable crudities some Sundays so that I have healthy veggies to snack on during the week. Bolthouse Farms makes a ranch dressing made with greek yogurt that's 45 calories.

I have a few suggestions.

One is a relatively famous but sometimes hard to swallow: mix oats, milk (or soy, almond milk, or water depending on your jam) with protein powder and some peanut butter. Let it soak for 4-24 hours (you could pack them up the day before, just prior to clocking out). Pretty decent protein porridge. Can also add cinnamon or cold-brew coffee (homemade of course) for added flavor and some apparent health perks. Personally, I love the taste, and if you control portions/additives (i.e., whole milk or unsweetened almond milk, easy on the PB) it can be a dieting or a bulking meal.

A similar option, if you have a water cooker at work or a microwave, is plain instant oats and Greek yogurt. The latter can be expensive; best to buy on sale or in bulk. Easy to get in a lot of protein that way. Add a whole apple for some extra fiber.

If you want to recreate your egg white omelette, there's also another option I used to use all the time. For very cheap in the US (and I imagine elsewhere), you can buy a microwavable egg cooker (or, you know, just use a big coffee cup or microwave-safe dish, but I think the plastic thing is worth the five bucks). Leave eggs or separated egg whites, a little cheese, some pepper or chili flakes, and spinach in the work fridge. Pop the eggs in the microwave, throw a bed of spinach on a plate, put the cheese on top of the spinach, cover with the hot egg whites to melt the cheese and slightly wilt the spinach, and chow down.

The one I use is this

I absolutely HATE making eggs as they're very time consuming for a small amount of food. I can make this sandwich in under 3 minutes time. ingredients are cheap and if you're use to fast food breakfast sandwhich then this will be perfect (and cheaper and healthier)

Eggs are incredibly cheap and if you have an egg cooker like this one you can make an egg or 2 in the microwave no problem without worrying about violating the housing rulebook

My breakfast sandwich:

Ingredients: JUST Egg, English Muffin, Daiya Onion and Chive cream cheese spread, Your choice of non-dairy cheese slices, baby spinach, choice of meat substitute, your choice of hot sauce, salt and pepper

  • Toast an English Muffin

  • Using a microwave egg cooker (I have one like this) pour in Just Egg until the entire bottom surface of the cooker is covered in the "egg". I would guess I'm using 4 tbsp of product per sandwich as I've gotten one less serving out of the bottle than I should if I used the suggested serving of 3 tbsp. Add salt and pepper to taste.

  • Cook the egg for 45 seconds (1100 watt microwave)

  • Remove the cooker from the microwave and place a slice of non-dairy cheese on top of the egg patty, close the lid to let the heat from the egg melt the cheese. (I use Chao Creamy Original)

  • Remove muffin from toaster, spread Daiya Onion and Chive cream cheese generously on either one of both halves of the muffin.

  • (OPTIONAL) add Sriracha or your choice of hot sauce to one of the muffin halves

  • Assemble sandwich, I add raw spinach to mine. You could also add a meatless sausage patty or bacon.

I got this thing and crack 3 eggs and put them in the microwave. It's amazing, and that's around 270 cal for 3 eggs. Get a green onion and just tear it up and stick it in.
