Yes, you can buy a "kettle" at any department store and it does not need to be specifically for brewing. Stainless Steel is preferred. Walmart has a line of really cheap (and thin) stainless pots made in India. I use a 3 gal one for doing my 1 gal batches...the pot was under $10. They have some better quality (thicker side walls, clad bottom, etc.) in the 4 gal range, but I picked up a 5 gal kettle off Amazon for under $60 that I thought was a better value.

In addition to 5 gal batches, I also brew 2.5 gal (sometimes 2.0 gal) stove top BIAB batches. I am really not a fan of brewing batches in 1 gal jugs, just because it is a lot of work and you only get 3/4 gal out if you are lucky (so 8 12 oz bottles). I really like the 3 gal fermonster fermenters, and they are a good size for 2 to 2.5 gal batches. I only brew 1 gal batches for experiments (usually single hop beers with extract). It is enough to evaluate a hop, but not really enough to share with friends.
