Canned are also picked at peak ripeness, so both frozen and canned have maximum nutrients (and may even beat "fresh", which loses nutrients during shipping)

Buy salt-free cans if you're worried about salt. Cans fundamentally don't need preservatives, they're a sealed can devoid of oxygen and bacteria. So its impossible to spoil.

Eeehhhh... that's a matter of opinion. Canned corn is a bit crunchier in my experience. In fact, I'd say Canned Corn has slightly better texture than frozen corn.

Canned Peas have a weird color when canned and are definitely a bit more mushy, but otherwise have the same nutrients (picked at peak ripeness, etc. etc). Frozen Peas > Canned Peas (but I still preferred canned because of other benefits).

Beans are utterly terrible when frozen. They taste like dry crap if you ever freeze them. Canned beans taste almost identical to fresh beans, except you don't need to soak the beans for 24-hours before cooking. (Heck, canned beans are ready to eat straight out of the can).

It really depends on the vegetable.

Canned have the following advantages:

  1. Steel container in cylindrical shape. Cylinders are strong and space efficient. Strong enough to stack multiple cans on top of each other, while the cylindrical shape means they can be placed into arbitrary shapes with near maximum space efficiency.

  2. Steel is far easier to recycle than plastic. Over 70% of steel packaging is recycled (Steel's average recycling rate is well over 85%, but that includes automobiles which really push the average up. 70% is a better apples-to-apples comparison).

  3. Plastic bags are recycled at a rate under 1%. Plastic bags gum up conveyor belts at recycling plants, and many recycling plants simply trash plastic bags. There's no economic value in plastic bag recycling (while steel cans are valuable as recycling to the steel industry). Economically, steel cans are simply more environmentally friendly.

  4. Even if steel were buried in a landfill, its simple to "mine" the steel out of a landfill, burn all the other trash, and isolate the steel through an automatic process. This is literally iron-age technology, humans have been isolating iron / steel out of the ground for millennia. Isolating Type1 Plastic (PETE) vs HDPE vs LDPE vs Type 7 (ABS typically) plastic on the other hand is way more intensive. This is why most plastic ends up in landfills: most plastic is contaminated with other plastic or food bits, and its not actually worth it to sort the thermosets vs thermoplastics.

  5. No refrigeration required. Frozen vegetables need to use refrigerated-trains, Refrigerated Trucks to get from farm to store. In contrast, steel containers can be packed into pallets, stacked on top of each other, and shipped in normal shipping containers. Sure, steel cans are a bit heavier than the plastic wrapping (higher gas for transport costs), but all the electricity that goes into keeping the food frozen probably emits more carbon.
