I actually use wired earbuds but when docked i have this usb-a bluetooth transmitter (don't buy it on Amazon since they're out, you can get it for $30 elsewhere) hooked up to my dock and this usb-c bluetooth receiver, which is super great build and sound quality, velcro'd to the back on my controller, and I can swap my controller charger between the two as needed which is really nice. If anyone is interested, DON'T get uBTR, it doesn't do apt low-latency and your sound will be out of sync.
There's a cheaper/smaller ATECH usb-c receiver but the sound quality sucks and it doesn't charge with usb-c to usb-c cables. If you don't mind charging it with micro-usb there are plenty of other options that may or may not be just as good as the FiiO for cheaper.
EDIT: FiiO receiver doesn't use the mic on the headset but instead one that is built into the headphones, I also have no idea if that transmitter or any for that matter with the Switch would accept audio back for voice chat either. I purely use the above setup for game sounds/music only, and not for chatting.
The BTR1K Bluetooth receiver and LC-3.5AS short cable leave you $230 to buy any MMCX IEM for a setup like this
I don't workout at a gym but I've found it to be pretty decent while running/jogging. If any of the 3 components of the setup stop working, you can just replace that part instead of the whole thing. No Bluetooth delays whatsoever. This setup is not waterproof but it can handle a bit of sweat (if cleaned properly).
Basically you can search for any IEM under $230 that matches your sound requirements without worrying about wireless connectivity.
Yes you could use this or this you'd still have a wire from the headphones to the device though.
AAC bluetooth is as good as APTx bluetooth, just not as widespread because only Apple devices use it. You could use something like this FIOS adapter into the aux input.

Soooo, I've actually, in the process of researching these suggestions, come to a completely different conclusion! What I have decided to do is buy a Fiio BTR1K (https://www.fiio.com/btr1k) and some Brainwavez Lambskin earpads. The end result of this stuff should bring my headphones into the 2018/2019 era. The Bluetooth adapter is also 5.0 compatible, which should future proof it for at least a few years! New life is in the future for my beloved cans!
You need to do what I did and make your own wireless headset...I am actually in the process of making a youtube video about how much better this combination is than all the other options on the market.

You can purchase a Fiio Bluetooth DAC that's superior to the headphone jack and use it with your existing earphones, thus cutting the umbilical cord between yourself and your phone.
