Okay, so their are several issues at hand here.


  1. Preground beans are shit. Coffee starts losing flavor as soon as you grind it, and God knows how long the coffee from your grocery store has been sitting there. Start buying beans that are no more than 2 weeks from roasted, and get a coffee grinder. This grinder has been the starting block for many coffee enthusiasts.


  2. Eyeballing shit or even using a scoop is unreliable and introduces an element of guess work into your coffee that will make it very difficult to find out what you are doing wrong. A cheap and simple scale like this will allow you to be much more consistant.


  3. Start with a good recipe and build from there. The reason you are seeing such inconsistency is because you aren't following any guidelines regarding your ingredients. Would you bake a cake by throwing an ambiguous amount of water, flour, and sugar and in a bowl and popping it in a over? Start following a recipe, this is the one that I have been using as of late
