This is my personal recommendation. There is a lot behind it, so get yourself a drink...

Before I explain each part, lets go over the general approach for this build. Philisophically, it is very different from what you proposed in the OP.
--
Your brother may "want" triple 1440p/144Hz but, in my personal opinion (based on personal experiences), it is a pointless scenario. First, good luck maxing out that 144hz with 3 screens at ultra settings in modern AAA games. Doesn't matter what cards you have, that is a difficult proposition. Second, unless he plays racing simulators there are not enough games that provide a worth while experience with this setup. Second, if video editing is his job, that should come first. That means picture quality comes first and that puts the nail in the coffin for 3 TN screens. Finally, the X34 with IPS and G-Sync will still provide that "immersive" gaming experience.

--
With that in mind what is the optimal configuration? IMO going with the new Acer Predator X34 100Hz 34.0" Monitor for gaming/editing and the HP Z27q 60Hz 27.0" Monitor for video editing. Let's start with why this works for video editing. First, >99% Adobe RGB (wide gamut). If your brother takes or wants to take content creation seriously, this should be a strong consideration. Feel free to google more on this, but basically, what you see on the screen is EXACTLY what the camera recorded. I have seen this monitor in person at B&H and well... it is real life on a screen.

More screen real estate is obviously ideal from a work flow perspective and I do concede that my solution offers 20 less inches of screen space... however by going with higher resolution screens you close that gap with pixel density (not to mention superior picture accuracy. Second, the longer dimensions and better DPI of the of X34 would be ideal for timelines, while the outstanding picture quality (color, contrast, etc) and DPI (5K) of the HP is ideal for viewing source media. This will give your brother a terrific setup for organizing, editing and viewing media.

--
Given this shift, other components have shifted around. At the end of the day my system may have "less GPUs" but the overall experience for what your brother wants (video editing and immersive gaming) will be better.

Honestly, even at this price I would go with the the Gigabyte 980 Ti Waterforce instead: http://www.amazon.com/dp/B017YOWRQ4

It's gets good reviews and (from what I've read) performs better than any other 980 Ti AIO GPU.
