I've used xylitol to backsweeten my ciders. About 3 T/gallon will give a decent sweetness without being too overpowering. After adding xylitol you can just bottle as you normally would.
Don't fear the chemical-y name, its a natural sweetener from birch trees.
Some health food stores stock it. Here in Aus, there are dedicated retailers.
If you're in the States, then you are so lucky, because Amazon lists a whole bunch. If you're paranoid about it coming from corn or China, there's items like this one which advertise that it's made from birch and made in the USA.
There's several chewing gum brands that contain xylitol, but I'm currently trying to track down a big name brand that uses 100% xylitol rather than a mixture.
Xylitol is pretty good. Make sure you stay away from chinese Xylitol which is made from corn. You want real Birch Xylitol made in the US.
