Gluten-free noodles - in the grocery store at the bottom of the Asian section are noodles that are made from just rice. They also make GF ramen packets, but I'm guessing the seasoning is out for him. The rice noodles cook pretty quickly. Regular GF noodles, like the ones from Tinkyada, take longer to cook, so that might be a fuel issue. He might try the different Asian noodles before going and see if they'd be acceptable in things like spaghetti (you'd have to dehydrate an acceptable sauce for him).
