While Iron Man: Extremis is a popular story that gets recommended a lot around here, I wouldn't say it's a necessary read for you at this point. There's not much in it that's similar to the movie other than the design of the armor. However, it's rumored to be a pretty big influence on the plot of Iron Man 3.

Your best bet, in my opinion, would be to start with Matt Fraction's Invincible Iron Man run. This title was launched right when the first Iron Man movie was released, so it's meant to be a bit new-reader friendly and is definitely in the spirit of the movie. You can either start with Vol. 1: The Five Nightmares or the first omnibus.

I don't think there's any solo stuff so far (although I'd love to see her get a series of her own sometime, even a mini would be neat).
Really Rescue's "origin story," all that comes after and the sacrifices she's asked to make to help Tony are a fantastic read.

And if you pick up the collections, either the omnibuses or the trades, they have inserts in them that explain things you might have missed out on if you weren't following Secret Invasion, Siege, etc.

Invincible Iron Man:

The Five Nightmares (#1-7)

World's Most Wanted (#8-19)

Stark: Disassembled (#20-24)

Stark Resilient (#25-33)

Easiest and cheapest way by far to get all 33 issues is the omnibus collections:

Omnibus 1

Omnibus 2

Edit: ColdFury96 pointed out below Rescue has gotten a one-shot comic. I haven't read it yet so I can't recommend it myself, but it's by Kelly Sue DeConnick so I'm sure it's good.

This hardcover is defiantly a good place to start. Fraction and Larroca's Invincible Iron Man is one of my favorite books of all time and this collects the first 3 trades: http://www.amazon.ca/Invincible-Iron-Man-Matt-Fraction/dp/0785142959/ref=sr_1_2?ie=UTF8&qid=1348951395&sr=8-2

I don't think I'd appreciate corporate stories as much with a floppy release schedule, better to read it all at once. I thought Invincible Iron Man volume 1 was a great read as a collection and number 2 continues to deliver.

I enjoy slow-burn stories (Hickman's New Avengers) and am trying to catch up on TPBs. Open to recc's :)

There is an Ultimate Iron Man mini series (only 4 or 5 issues) that is fairly good.

But if you want good recent Iron Man stories try find matt fractions recent run of The Invincible Iron Man (first 12 issues here). It is very good

For Captain America check out The Winter Solider story line (starting here). This is what the latest movie will be based on. it is brilliant.
