Based on your confusion on "grab the diaper bag" it does not sound like the 8 bags are all large. Best suggestion I have is to get heavy duty, large bags. Something like this https://www.amazon.com/Khaki-Purpose-Large-Collapsible-Utility/dp/B00WPULSO0 to pack your car with. Obviously you'll need something different if you're flying, but for driving these are great if you need to get something out, because there is no unzipping or anything. You can buy some with zippers if you'd prefer.

If your trip is long, do NOT overpack. Do laundry instead, if that's an option. If you're driving a decent distance, and you're tight on space in the car, buy groceries when you get to your destination (if you're staying in a condo or something where you actually need groceries).

Bring along the diaper bag(s) you usually use, and repack it each day before you leave your house/hotel. No more confusion on which diaper bag to bring, as there is now ONLY ONE size bag that is reasonable to be carried around for a day. Get a diaper bag that has changing mat in it, and you won't need to carry a whole different bag just for that.

Keep an extra set of clothes for each child in your car, always. If you ever take those out, the very next day your babies WILL all have accidents that will result in a rush home or a rush to the nearest store to buy more clothes.

Source: Nanny for two sets of triplets. One set from 6 months to 5 years, and still with them, and a set of 1 year old triplets on my day off from the first set. I've done vacations and day trips, spent many hours in a vehicle with them, rinsed poopy pants in bathroom sinks, and ran around like a mad woman trying to find a place to warm up bottles in situations that were less than ideal.

ETA - check with hotels/family/friends in the area you're going for large items like pack and plays instead of bringing your own. If you visit relatives often that live far away, it is much simpler to buy a stroller and leave it there rather that load yours up and drag it along each time.
