Remember that white will discolor slightly over time from the oils in your skin and friction. This is less visible on darker black/gray mice, obviously - hence their popularity. Not many periperhals get as much hand time as mice.

You have the latest MX Master from Logitech which I really want personally. It does not have rgb though. I hardly remember seeing one, since RGB is mostly associated with gaming mouse, and wireless mouse are rarely associated with gaming. Since gamers prefer supposedly wired mouses for higher response time.

If you mean switching via Logitech Flow, this is the original MX, not the MX 2S although I think Amazon has a sale for the 2S as well right now. MX 2S with Logitech Flow

Nowadays since my PC is gaming/streaming only it helps to just use the g700s while the other side of my desk has the docking station for my laptop with the MX.

See this is the problem I see here. Of course, their products will work with their OS, but so does every other keyboard and mouse out there in the market. These products work universally. The competition also puts out accessories that are just as durable, and generally work better for the office. For example, my Anne Pro 2 is a $70 Mechanical keyboard with Bluetooth capabilities, and with this, I can switch between any device (Not just my iMacs, as I have different layers of choosing my layout ), has RGB lighting, and a better typing experience than what an Apple Magic keyboard offers.

And having a whole office match is still extremely easy with the color palette Apple has chosen.

Because something like this keyboard and this mouse here can easily match with this kind of setup. And if you even want, you can spray paint your mice and keyboard to match the setup (This is what I did).

And it is not like these kinds of products are not sketchy. Logitech is a very well known brand for being good with their mice and customer support and the Anne Pro 2 has the whole r/AnnePro subreddit for any troubleshooting needs.

But really, a business example is not a good one to use in this situation. They have significantly more funds than your average consumer and their being able to afford such things does not mean that the accessories are not overpriced. It just means that they don't care about the pricing. In this example, you can literally say that because it is a business that exclusively buys from Apple and they do not care about the pricing of your equipment, why not just get yourself the highest end iMac Pros that are 12 grand each?
