I have an end-grain maple board that has seen daily use since the late 90's. It'll outlive me.
Just cut only things you can eat raw on it. Wipe it off with a damp paper towel after you're done. Then once a week, wipe it down with plain vinegar, wipe it off. Once every couple months, rub in some mineral oil. All there is to it.
I use poly boards for meat. They go in the dishwasher and get replaced every so often. If they slip, put a couple wet paper towels under them.
