End-grain wood. Maple is probably my favorite. Acacia is nice too.
I have boards from Gregg Palm (maple/walnut), Michigan Maple block (maple), Mountain Woods (acacia) and catskill craftsmen, in decreasing order of preference. Happy with all of them, just more happy with some than others.
In terms of bang for the buck, the Mountain woods acacia at 16x16x2.5" is probably my favorite. Just make sure your mom is comfortable handling a slab that size when it needs to be moved. Final note: Don't waste money on 'board' oils. Just get food-grade mineral oil (labeled as a laxative, unscented) from the pharmacy section of your local grocery store/wally world, runs about $2/pint instead of $10/pint for 'board' oil.
