You say "mostly" gaming PC. What does that mean exactly? What resolution are you playing? What GPU are you running? A 3900X for mostly gaming isn't a good idea if you're putting budget towards the CPU that would be better spent on the GPU.
Secondly, if you're intent with using the 3900X, and if you're already spending $320+ on the motherboard, I would go with the MSI MEG X570 ACE (I don't like MSI boards, and they need to do a LOT to impress me in order to recommend one. This one does. Dat VRM config.) (MEG UNIFY is also good as suggested by another poster.)
For memory, don't bother wasting $140+ on the dwindling B-Die stock when you can get 98% of the performance from Hynix CJR at roughly half price, and again, put more money towards the GPU: G.Skill Ripjaws V 3600MHz CL16
Also, Zen2 + overclocking = nope. Don't even bother unless you're doing chilled liquid, or LN2. It simply isn't practical, and the chips are running at 99% of their potential performance right out of the factory. Look at Zen2 as "already overclocked for you."
