i might suggest if you get fresh (relatively) lemons, some bars don't have the luxury, i might buy a couple of squeeze bottles and quart containers usually found at restaurant supply stores, in variable sizes as, at the beginning of the shift of that day prep a few containers of lemon juice, that will definately cut down on the time spent juicing individual lemons. and if you don't think it's artisanal enough to have pre-juiced lemons then you don't have to use it all the time, but when you get that order that puts you twenty deep you will definitely be glad that it's there.
