This already exists. I use them at home. Love it.
I own this one and use it at night when my roommate is asleep. It's pretty quiet except for the scroll wheel. I don't use it a lot but when I do game at night it's served me well. At least one of the reviews say it may not hold up for a long time under high click games like Dota, and it's a pretty basic mouse. Regardless it's ~$6 less than I paid for it and even if mine broke I'd probably buy another.
If the problem is the sound of the clicking, why not try to find something that has a silent click?

Why:
--side note--left/right click, the middle wheel click, and the two buttons on the side are silent...Which is important to note, because my first two silent mice had a loud clicking wheel which was terrible-a game I was playing required a wheel click to turn the camera.
2)Price is great. 19$ Even as a back up or travel mouse(or silence for the office) very cheap and if you had prime it's a prime item. I personally don't use it as a back-up, it's my daily mouse. Sure there are some expensive ones out there which might make you feel 1337 and such but this one has taken a beating...very click intensive gaming for about a year...and I've dropped it on the floor a lot :$...still haven't needed a replacement.
3)Wired is either a turn off for you or not, but the wire is a good 8-9 feet. I'm not sure if there's a stigma or not, but I don't like the idea of mouse lag during gaming on wireless mouses. So I choose wired.
Many of the fancy mice that people named in this thread are under 60$--get one of those if you want style or whatever for when everyone's awake, but I still say get this one for when one of you is asleep and the other stays up.
Extra extra note: since she is a big gamer I have to again assure that I've put this thing through ALOT of clicks, specifically gaming, a lot of drops on the floor, cats knocking it off tables...ill buy another one the day this one finally breaks because it's quite the dopeness

Playing LOL drove my wife crazy so I had to get one.
It really is totally silent. I was worried to get it because reviews said the buttons broke pretty quickly but I've been using it for about a year now with no troubles. This is the best silent mouse I could find when researching it a year ago.

Careful though, the drivers suck and I had to switch from Windows 8 to Windows 7 for better compatibility. It occasionally crashed my laptop. They're both good mouses and since I've only had this one for a few months I can't say it's any more durable.

For a silent gaming mouse, I personally recommend this one on Amazon: It's a good price (just under $20) and is really quiet compared to most computer mice.
Not much help with a silent keyboard I'm afraid.
You could have her wear headphones. There are mouses advertised as quiet. You could tell her it would be a good birthday/christmas/random present. You shouldn't attempt to limit clicking because it will probably ruin how well you play.

For the Keyboard I went into PC world and went round tapping all the keyboards to find the quietest, and then when I got it back home I put two of the old foam mouse mats under it to cushion the keyboard from the desk. Worked well enough :^)

I ordered this one from ebay for 10 euros. It really is silent, you can't hear anything really. The mouse weel makes noises but I don't really use that a lot anyway.
I have really small hands, so I used a G203 before. The logitech felt better, but not that much. I chose the silence over the satisfaction of the click :)
I became accustomed to this mouse in 3-4 days. now I don't really feel a difference in Terms of gaming. It doesn't have fancy macros or anything, but it does everything I need it to do and was real cheap. I'd say give it a try :)
Oh, and also It doesn't have useless RGB shit on it!
