It appears that one has questionable quality and breaks quite easily. I would go with Oxo's one. They always make quality products in my experience plus it was the recommended cookie press in the November 2013 issue of Cook's Illustrated. Here is a video of it being used. Im guessing she has an old Miro cookie press? Any plunger style cookie press should be easier on her hands. Apparently the Mirro discs also fit in this cookie press so thats a thing to consider too. Also if you search amazon's reviews, and a lot of people with arthritis seem really pleased.
Best of luck in your training and take care of yourself! also, nifty contest :)
My entry would be this cookie press set. I haven't had made these since my mother and I had Christmas cookie parties when I was a kid.
