I use something like this to make my computer easy to carry, and use a usb-powered touchscreen for display and mouse input. If you're just doing demos, you may not need a screen or input devices, but they're nice to have.
This keyboard/remote/touchpad/flying mouse paired with a <$100 USB screen would work well for a portable VR system.
Put the Vive and lighthouses in the original box for transportation, or if you have the spare cash, get a headset with inside-out tracking for demos. I use an Odyssey+ for this purpose, leaving my Vive Pro safe at home.
