Cumin-roasted carrot and parsnip

Gruyere and Mushroom Tart I have no idea what the hell "shortening" is, I just make some shortcrust pastry.

Lancashire cheese, beetroot and orange zest pie you could use something a little less strong instead of the mayo, like sour cream, creme fraiche, or cream cheese - this makes the other flavours stand out a bit more. Grate in the zest of one orange per 4 servings, and serve with a little bit of chutney on top - preferably one that isn't too sweet.

Carrot and Coriander Soup: I got that from This book. I'm hesitant to copy out cookbook recipes on the internet, but I'd recommend buying this one. I found it on the US site for you (I'm assuming you're American), but I'm not sure how much it would cost you, since it's a British book. It's definitely worth having though.
